Lunch Box Snacks - Crunchy Peanut Bars
These lunchbox treats are a great dessert. They are easy for kids to help make, and you can alter the recipe to include a cereal you prefer. This holiday season, we made them with rice krispies, but I prefer the cornflakes.
1/4 C. lite corn syrup
2 tbsp. brown sugar
1 tbsp. white sugar
1/4 C. creamy peanut butter
1 1/2 C. corn flakes
1/4 C. spanish peanuts
1/2 C. melted chocolate
Bring the corn syrup and sugars to a boil. Remove them from the heat as soon as it boils and stir in the peanut butter. Fold in the corn flakes and peanuts. Press the mixture into a pan and spread the melted chocolate over top. (I use a small, square dish for thicker bars.) Chill until firm. Wrap in plastic wrap and pack in an insulated lunchbox. Enjoy!
