Cheesy Chicken Toast

This recipe is great for lunch or dinner. You could even use small slices of bread and use these as an after-school snack or as an appetizer at a birthday party.

Cheesy Chicken Toast Recipe:

1 pkg. of chicken tenderloins, cut up in small pieces

1 small, chopped onion

3 tbsp. of soy sauce

1 tbsp. oil

1/2 C. cream

1 loaf of french bread or any favorite bread

1 bag of cheddar cheese

1/2 stick softened butter

Minced garlic

Preheat broiler

Cook chicken and onion in oil until lightly browned. Add soy sauce. Cook on med. another 3-4 minutes. Add cream and cook 8 minutes over med., without boiling. If mixture boils, turn heat down. Take mixture off heat and set aside.

Mix the half of stick of butter and garlic until well blended. Slice the bread loaf into medium thick slices. Spread garlic butter on each slice and broil until just lightly browned. Remove bread and put spoonfuls of the chicken mixture on top. Sprinkle heavily with cheddar cheese. Put under the broiler again until cheese melts. Serve hot. Reheat in the microwave or oven the next day. You can substitute mushrooms for the onions, if desired.
