No Bake Cookie Contest-Win A Kids Cookbook

kids-cooking.jpg  What are no-bake cookies? That was the first thing that ran into my mind when a friend mentioned she was going to bring some with her when she came for dinner. What the heck is a no-bake cookie? She tried to explain it to me, since she ended up bringing cupcakes instead. My second thought was, okay that sounds disgusting. I didn’t give it another thought until last year’s Christmas cookie swap. The instructions specifically said you couldn’t make no-bake cookies for the swap. After that I figured these cookies must be pretty popular if you have to instruct people not to make them, so I did a little research.

I found that a no-bake cookie is exactly what is sounds like. A cookie that you don’t have to bake before you eat. That doesn’t mean there’s no cooking involved, though. While most of the recipes I ran across didn’t sound too appetizing, I realized that these no-bake cookies were perfect for kids to make. So with slight trepidation and a small gnawing belief that you couldn’t make a tasty cookie without baking it, we gave it a try. We ended up with something between a cookie and a chewy, peanut buttery gooey tasting thing. That ended our research on no-bake cookies.

But then I thought, why not have a challenge? Why not challenge other kid chefs and their parents to a no-bake cookie challenge? So that’s my offer to any of you reading this. Leave a comment that includes one of your favorite no-bake cookie recipes. I’ll collect all recipes submitted between now and August 17th. We’ll cook them, or no-bake them if you prefer, snap a photo and post them to this blog. After trying all recipes, we’ll (me and the kids) pick a winner. The winner gets their recipe showcased on the blog and also wins a copy of The Kids’ Holiday Baking Book by Rosemary Black, pictured above.   

Since our first no-bake cookie experience was such a flop, I’m looking for proof that great tasting, no-bake cookies exist.  The winner will be showcased during the last week of August. An announcement will be made a few days before. So holler at me and give me some good no-bake cookie recipes to try.

  • My absolute favorite Christmas cookie as a child was a no-bake. I don’t know if they have an actual name we always called them cracker cookies…or you know those white chocolate things LOL.
    Ingredients
    White Chocolate
    Peanut butter
    Ritz crackers
    Sprinkles (optional)
    Instructions
    Spread peanut butter on a cracker then top with another cracker. Repeat for desired number of cookies. Melt the chocolate in the microwave. Dip the cracker sandwich into the chocolate and lift out with a fork. Place cookie on waxed paper to cool and harden. Before they harden you can sprinkle with seasonal sprinkles or you can leave them and make little snowmen out of them :)
    As a side note I have also used milk chocolate and while they are good that way they aren’t my favorite, probably because they aren’t what I had as a child. I hope your kids (and you) love them!

  • A friend of ours sent these cookies to us at Christmas. Tastes great and so easy to make. We made these and sent them to people for Valentie’s. They look really cute if you sprinkle decorative sprinkles on top of the melted coating.

    Cookie Balls
    1 lb. orea cookies, crushed
    1 - 8 oz. cream cheese, softened
    1 lb. vanilla flavored candy coating, melted
    In a large mixing bowl, combine the crushed cookies and cream cheese to form a stiff dough. Refrigerate ntil the dough is no longer sticky. Roll into ball. (We refrigerate again just to make sure the balls are solid). Dip into melted candy coating. Place on waxed paper until set. We normally do these in 3 days by refrigerating overnight after each step.
    Enjoy!

  • Peanut Butter Cookie Balls:

    1 Stick Margarine (softened)
    1 1/2 Cups Creamy or Crunchy Peanut Butter
    1/4 Cup Light Corn Syrup
    3 Cups 10X Powdered Sugar
    1 Tsp. Pure Vanilla

    Combine all ingredients and knead to a smooth consistency. (Mixture should hold together but not be sticky to the hands) Form into small balls. Dip balls into chocolate sauce and decorate with finely chopped nuts,sprinkles,etc.

    Chocolate Sauce:
    In a double boiler heat 12oz of Sweet Chocolate chips or White Chocolate and 1 tsp of solid shortening, such as (Crisco). Be sure water is hot but not boiling. When chocolate melts stir to a creamy smooth consistency and dip peanut butter balls in chocolate and set on a plate covered with waxed paper to decorate and let dry. May be placed in freezer for a minute for a quick dry.

    Insert a fancy toothpick in the top of ball for easy handling.

  • Cocoa Puff Cookies

    1/4 c. honey
    1/2 c. white Karo
    1 c. Sugar
    1 (12 oz) jar peanut butter
    4 c. Cocoa Puffs

    Combine first 3 intredients and bring to a boil for 1 minute. Take off fire and add peanut butter. Stir until smooth. Add Cocoa Puffs. Mix and drop by teasponfulls on wax paper. Let air dry.

  • My daughter and I have our absolute favorite cookie ball out there. It is as follows:

    1 cup Granola
    1/2 cup Brown Sugar
    1 cup Skim Milk Powder
    1/2 cup Raisins
    1/2 cup dried Coconut
    2 cups Peanut Butter

    Mix the granola, brown sugar, skim milk powder, raisins all in a bowl.

    Then add the peanut butter until completely combined.

    Now pour dry coconut on a cutting board, form balls of the peanut butter mixture and roll in the dry coconut.

    Place in refrigerator for two hours, and enjoy!
