Easy Egg Sandwich

One of our favorite weekend breakfasts is an easy assembly line type egg sandwich. All you need are some mini bagels- we like Thomas Mini Whole Wheat Bagels-, scrambled cheese eggs, bacon or sausage.

Cook the bacon or sausage first, crumbling the bacon with your spatual so it fits on the little bagels. Next, scramble the eggs with cheese. Give someone the job of toasting all the bagels while you scramble the eggs. Then gather the kids in a line and let them help assemble the egg sandwiches.

Let one person spread butter, jelly or cream cheese onto the bagels. Another adds the eggs, another adds the meat, and the smallest child can top off the sandwich with the bagel top. Kids not only love eating these fast food style breakfasts, but they love helping make them. We serve them with warm cinnamon rolls, too. It’s like having a Mcdonald’s at your house.
